The magnet holds the door closed. Unless you have an incredibly strong magnet, it's not going to close the door if it was left open.
If the fridge is level and you at least start the door towards being closed, the magnet is usually strong enough to prevent the door from bouncing back open.
If the fridge tilts just slightly toward the back of the fridge, the door will close on its own as long as the door isn't left open by more than 90 degrees relative to the front of the fridge. The magnets will usually be strong enough to prevent the door from bouncing back open.
As a result, a new refrigerator will tend to be self closing, since the person delivering the fridge carefully balanced it before leaving. An old fridge will tend to sit open when people forget to close the door because the front levelers have wound up shorter than the rear levelers. (But, a person could fix the balance back to what it was when the fridge was new if they understood why the door used to close automatically - i.e. they didn't think their magnets suddenly stopped working.)
